Our tables are versioned, e.g., TABLE_Vnnn, where nnn is a version number. In our diagrams, we don’t want to show TABLE_V001 or TABLE_V002; we want to show TABLE_Vnnn or TABLE_V999.

Unfortunately, I’m not sure what you mean.
Anyway, here’s tip for you:
you don’t have to include the version number in the table name. Just name the table and then edit it, click the Notes tab and write a note about the version number of the table. Confirm.
When you point your mouse cursor at the table name on WS, a pop-up box with the note will appear. So, you will see the information on the version number when you need it.
Note: Notes are not generated in SQL script.
