Exporting data using with pivot tables options | It would be very useful to be able to export data / pivot tables without having to recreate the pivot table in Excel every time the query is executed. Is there a way maybe that I am missing in the process?

Use a completed excel file as template and use query to update the data. Then use vba to update the pivot with new data.
