There is a new format for DATE types in the generated script, it uses ‘.’ instead of ‘/’. How can we override this behavior and set the terminator character to the old one?
change your date format in Toad’s main settings window. It will follow whatever settings you have there.

I like the yyyy.mm.dd date format in Data grids, but using it in the script outputs with the same format is not so good: SVN shows all my .dat files has been changed 
Can we use a Date format also for the requested output, or at least override the delimiter char?

What was in the “Date format” box before you clicked the “…” button? Sounds like it might have been blank.
It was mm/dd/yyyy.
My Date format setting in Toad Options|Data grids|Data is yyyy.mm.dd.
Hmmm. In WIndows, if you go to “Region and Language”, what do you have for the “Short Date” format?
I noticed that a space is allowed there as a date separator - that could be a problem but I fixed it for next beta.
