Can the editor window be opened in its own window in V12.7? This would allow me to have a full-screen view of the code I’m working on.

Not exactly although if you hit F2 it'll set all dock panels to auto hide (unpinned) mode giving you a lot more space. F2 again toggles you back to pinned dock panel mode.
