Is there any built-in functionnality in Toad to see which database modifications (e.g. field changes) are contained within a pending commit?

There is no feature in Toad that will show this, and as far as I know, there is no query that you can run to get that info either. If it turns out that I am wrong about the latter, that would be a nice thing to show in Toad.
Totally agree. Would be a nice safety belt feature ! Very sellable 
I know you were asking about before the commit, but, for what it's worth...
You can use LogMiner (if you have the DB Admin Module) to see changes in a transaction AFTER the commit.
